2000 Cabernet Sauvignon

Winemaking Notes

Harvested in late September at 25°Brix with 0.65 TA and 3.58 pH.

This wine has a deep ruby color.  The aroma features rich bright cassis fruit.  Medium bodied, the flavors are of sweet zesty red berry fruit.  A well-rounded profile of tannins precede a soft smoky oak laden finish.

Barrel aged for 8 months in 20% New American oak barrels, 20% New French Oak barrels, and 60% neutral French and American Oak barrels.
