Rosé of Pinot Noir
For our Rosé, we treat the fruit and fermentation like a white wine. Out of that philosophy, we typically end up with a very fresh and fruity, well-balanced rosé. Notes of strawberry and bright red cherry lead on the palate with a balanced, cleansing acidity.
Harvest and Production Notes:
The grapes for our Rosé of Pinot Noir are harvested in the cool of night in order to have a controlled and slow start to fermentation. Generally harvested with a low brix of 22.0 deg., the grapes are crushed and immediately pressed. The resulting juice is chilled, settled and racked before inoculating with the same type of yeast used for our Pinot Grigio. Fermentation is long and cold.
